Chicken Green Bean Casserole

1 cup chopped fresh green beans, ends trimmed
2 chicken breast baked and chopped into bite size pieces
1 can fat free cream of chicken (or cream of mushroom soup)
1/2 cup fat free milk
Nonstick cooking spray

Coat a large skillet with nonstick spray. Spray a dash or two and use paper towel to wipe and coat entire pan.

Cook green beans on medium heat, stirring occasionally until green beans soften.

Stir in baked chicken, soup, and milk.

Combine and continue to heat through.

Ham & Broccoli Frittata

1 tsp olive oil
1/2 cup chopped broccoli
1/2 medium onion, chopped
3 egg whites
2 whole eggs
4 oz cured ham, chopped

Use your broiler, heat it up.

Meanwhile, pour extra virgin olive oil into large skillet and place over medium heat.

Add broccoli and onion and cook, stirring occasionally, until veggies begin to soften.

Meanwhile, beat egg whites and eggs in a medium bowl.

Add ham to broccoli-onion mix and heat for 1 to 1 1/2 minutes.

Add eggs to skillet and let cook without stirring until set around the edges.

Remove skillet from stove and place under the broiler until eggs are entirely set. (If your skillet is not oven proof then wrap it in aluminum foil first.)

Nacho Man Snack

4 cups tortilla chips
1lb. extra lean ground beef, cooked and drained*
1 cup black beans, rinsed and drained
1 cup picante sauce
2 tbsp. chopped jalapeno peppers
1 cup shredded fat free Mexican-blend cheese
2 tbsp. fresh cilantro
Nonstick cooking spray

Preheat oven to 350 degrees F and coat 8×10” baking dish with cooking spray. Layer dish with chips, add ground beef, beans, sauce and peppers.

Top with cheese and cilantro.

Baked uncovered for 10min. or until cheese melts.

* To make this dish healthier & lower in fat, substitute chicken or extra lean ground turkey for the beef.
